Big Boy’s Fresh Strawberry Pie

If you’re fortunate enough to have a Big Boy restaurant nearby, you may have experienced the delight of their fresh strawberry pie. However, for those who don’t have that luxury, fear not! You can easily recreate a delicious Big Boy-style strawberry pie in the comfort of your own home.

Ingredients:
Pie Crust:
– 1 cup all-purpose flour
– 4 ounces butter, at room temperature
– 3 tablespoons powdered sugar
– 1 teaspoon vanilla extract

Strawberry Pie Filling:
– 1 cup water
– 3/4 cup granulated sugar
– 1/4 teaspoon salt
– 2 tablespoons cornstarch
– 1/4 teaspoon red food coloring
– 1 quart strawberries, rinsed, stemmed, and dried
– 1 pint whipped cream for garnish

Instructions:
1. Preheat the oven to 350 degrees F. Prepare the crust by combining the flour, butter, powdered sugar, and vanilla extract. Mix well until the ingredients are thoroughly incorporated. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Prick the crust all over with a fork.
2. Bake the crust for about 10 to 15 minutes, or until it turns lightly browned. Remove it from the oven and let it cool completely.
3. While the crust is baking, prepare the strawberry pie filling. In a small saucepan, combine the water, granulated sugar, salt, cornstarch, and red food coloring. Stir the mixture constantly over medium heat for approximately 5 minutes, or until it thickens. Set the glaze aside and let it cool.
4. Once the crust has cooled, place the rinsed, stemmed, and dried strawberries into the crust, creating a piled filling. Pour the cooled, thickened glaze over the top of the strawberries. Refrigerate the pie until the glaze sets.
5. When ready to serve, garnish the pie with a dollop of whipped cream or whipped dessert topping. Enjoy!
